BBQ Squirrel

  • 4 to 5 squirrel, cut into pieces
  • Your favorite marinade
  • garlic powder
  • salt
  • pepper (cajun or cayenne if you like spicy)
  • BBQ seasoning
  • Your favorite BBQ sauce
  • foil
  • Put meat in a ziplock bag and cover it with the marinade.  Refridgerate for at least 2 hours (Overnight is best).

    Place foil in 9 X 13 pan and use enough that it can be folded over and sealed.

    Place meat in pan (on foil) and season with garlic powder, salt, pepper, and BBQ seasoning to taste.

    Seal foil and bake for 2 hours @ 350 degrees.

    Pre-heat your grill, when oven cooking is done, remove squirrel from foil and place on grill.

    Coat meat with BBQ sauce and grill over medium heat until sauce gets sticky (Don't overcook!).

    Remove from grill and serve.

     

     

    Fried Squirrel

  • Cut desired amount of cleaned and dried squirrel into pieces
  • Milk (or Buttermilk)
  • Egg (1 for every 2 average sized squirrel)
  • flour
  • salt & pepper (I like spicy, so I use cayenne pepper)
  • Your choice of cooking oil
  • Soak meat in milk for at least 1 1/2 hours, in refridgerator.

    Combine flour and seasonings in a bowl.  In another bowl, beat egg.

    Heat cooking oil in skillet to 375 degrees (use enough to have approximately 1/2 inch in skillet).

    Roll squirrel pieces in egg and then in flour mixture to coat.

    Place coated meat in heated oil and fry (covered) until golden brown, turning occasionally to avoid scorching or sticking.

    Remove meat and let drain on a plate covered in paper towel to remove excess oil.

    Now serve with favorite side dishes. (Great served with fresh gravy and biscuits)

     

     

    Crock Pot Squirrel

  • 4 to 5 squirrels pieced, cleaned and dried
  • Flour
  • cooking oil
  • salt and pepper
  • 1 onion
  • 1 large can of cream of mushroom soup
  • 1 small can of cream of chicken soup
  • 1 cup of sour cream
  • 2 cups of water
  • Heat cooking oil in frying pan to 375 degrees.  Mix flour, salt and pepper.

    Roll squirrel pieces in flour mixture and brown in skillet.

    Remove browned pieces from skillet and place in crock pot.

    Add soup, water, and diced onion.  Cook on high for 30 minutes.

    Reduce to low and add sour cream.  Continue to cook for 6 1/2 hours.

    Serve with rice and/or biscuits.
