Pricing for beef is $3.50 per pound, based on hanging carcass weight.
Our steers have been averaging around 60-62% live weight to carcass yields.
We require a $400 deposit in order to get the processing process started, at which time the steer's appointment
date is set up (depending on the processor's schedule, this date may be a few days up to a couple weeks later).
Actual live weight of the steer is taken at the processors when they step off the trailer. Hanging carcass weight is available
by the next morning, and the balance owed for your order (either a side or whole beef) will be computed at that point.
We will ask for your input as to your preferences on the cutting details (steak thickness, number of servings per package, etc).
Highlands do not carry the excessive backfat like most beef breeds, so there is little waste fat on a Highland carcass.
This pricing includes all processors fees. The local processor we use utilizes the vacuum wrap
method of wrapping the meat, so there is more protection against freezer burn.
We are not set up to sell by the cut at this time; you must order by side or whole beef only.
You would need to make arrangements to come pick up your beef when
the processing is completed, about 14 days after they go into the processors.
